Macaroni Salad

The perfect summer / BBQ side dish! Can you tell I am anxious for July?!



16 oz elbow macaroni

1 cup chopped red onion

1 cup chopped celery

1 red pepper chopped

2 cups mayonnaise

1 - 14 oz can sweetened condensed milk

1/2 cup white vinegar

few dashes salt and pepper


1. Boil pasta according to package directions. Cook only for 8 minutes - a bit undercooked so it does not get soggy when soaking up the sauce.

2. Strain pasta and set aside.

3. In a large bowl, add vegetables. Stir in noodles and refrigerate.

4. In a small bowl whisk together mayonnaise, milk, vinegar, salt and pepper. Stir sauce into the noodle mixture until smooth. Refrigerate overnight, stir once again until creamy.
